地瓜干也叫番薯干，是福建省连城县和山东的传统土特产，其口味软甜备受广大消费者喜爱。其中福建连城是地瓜干的最大产地，占70%以上市场份额。清朝时，由于其优良的品质，经常作为皇宫的贡品。地瓜干保留着自然的色泽和品质，颜色黄中透红，味道清香甜美，质地松软耐嚼，而且还有很高的葡萄糖和维生素A、B含量。一般是将整块地瓜蒸熟去皮，然后压制、烘烤。制成之后可保存几年不坏，既可当零食，也可切成小块，拌上面料、鸡蛋、香料，经油炸再沾上冰糖粉作为酒席名菜。将整块地瓜去皮，然后制片或切条、蒸熟、速冻、油炸。
