In the kitchen, the emphasis is on earthy, top-quality ingredients: freshlybakedbread, homemade sausages, house-pickled vegetables, offal and suckling pig.
Up front is a sprawling deli counter of meats and cheeses, freshlybakedbread, and imported oils and vinegars, as well as a small bar that houses orange juice and coffee machines along with the hard stuff.
We deliver freshlybakedbread every morning to our cafes, and at the end of the day the bread that goes unsold is taken out the back door in black plastic bags and is delivered to food pantries and soup kitchens.
